The renovated Finlandia Hall relies on SmartKitchen’s digital solutions

Finlandia Hall, designed by Alvar Aalto and completed in 1971, is one of the most iconic landmarks in Helsinki. After an extensive renovation, this cultural hub has reopened in even greater splendor, offering guests new gastronomic experiences in the form of the à la carte restaurant Finlandia Bistro and the wine café Finlandia Cafe & Wine. In addition, the kitchen team is responsible for the high-quality intermission catering that complements the guests’ cultural experiences.

Mikko Puuronen, Head of Kitchen Operations at Finlandia Hall, oversees the kitchen’s operations. With extensive experience from Michelin-level restaurants, his previous positive experiences with SmartKitchen’s services at his former workplace led him to choose them for Finlandia Hall’s kitchen as well.

“A modern top-level kitchen needs modern tools to operate efficiently and responsibly,” Puuronen explains. “SmartKitchen’s service not only automates our self-monitoring but also helps us manage food waste. This is especially important when working with high-quality, local ingredients. My previous experience with the service made the decision easy – I knew exactly what we were getting.”

Finlandia Bistro’s food philosophy respects Finnish flavors and craftsmanship. Hidden from the public, the modern kitchen is where Puuronen and his team create delicious dishes from Finnish ingredients, also drawing inspiration from Alvar Aalto’s love for Italy and Mediterranean influences. The pure flavors of Nordic cuisine are highlighted by showcasing the best of each ingredient.

The first menu at the bistro is largely Puuronen’s creation, but Head Chef Juho Lindström is already working on the next one. The aim is to frequently change the dishes and emphasize seasonal thinking, where planning and foresight play a crucial role. Lindström also incorporates fermentation, pickling, and curing in his flavor profiles.

Next to the bistro, Finlandia Cafe & Wine offers the chance to enjoy carefully selected wines and coffees while taking in the stunning views of Töölönlahti. The restaurant operations at Finlandia Hall are led by Restaurant Manager Mirva Heino.

SmartKitchen’s digital tools support the operations of Finlandia Hall’s kitchen, freeing up staff time to focus on what matters most—creating unique culinary experiences. The automated HACCP and food waste tracking ensure that the kitchen’s daily routines are efficient and responsible.

“We are honored that Finlandia Hall has chosen our services,” says SmartKitchen’s CEO Matti Verkasalo. “This demonstrates how crucial digital kitchen management can be—not only does it ease day-to-day operations, but it also helps achieve sustainability goals and ensures food safety.”
